That's exactly what we fly too. Working sails. Period.
Performance--primarily ability to point well--is much much better than with
our 130 genoa and main. With even just the yankee and main it is much
better. The genoa hasn't seen the light of day in 3 years now.

And I seriously doubt the genoa enabled us to sail in significantly lighter
winds...emphasis on the word "significantly".

Our staysail stay is removeable but we rarely remove it now. The bare stay
is no problem at all with winds over 10 knots or so. With lighter winds,
we'll often put the staysail up, both to give us more power and to help tack
the yankee.

Sailing has become much more pleasureable after we stuck with the working
sails. Less work, less hassle, much less snagging of sheets, all without
any significant loss in performance to us non-racers.

Like Rick, we don't attempt to sail in winds under 5 knots true. Actually
with us it's more like 7 knots. With any lighter winds our track is more
likely to be controlled by currents, regardless of what sails are up.

I finally had enough forethought to bring a camera on board to snap a couple

We fly a 'factory' configuration: Yankee/Staysail/Main. There has been a lot
of discussion about flying a large headsail and making the inner stay
removeable. Bob Perry thinks this is a good idea and it probably is. But, we
find that the two small headsails give us a great deal of flexibility. Plus,
these sails are easy to handle. Sure, this setup is not conducive to
anything under 5 knots, but above that (which is the only time we sail
anyway), she's a dream. And it looks way cool!

In any case, you can see from the pictures that we have very little issue
with chafe from the coming or from the rigging.
