I have thought about doing this same thing, "if I should add a
watermaker". What I would consider is making the smaller starboard water
tank into a diesel storage tank as it can flow down hill into the main
diesel tank when needed, (no transfer pump required). The port tank
holds enough water for a crew to survive an ocean crossing if the
watermaker fails. Having lots of diesel would give you an enormous
motoring range when there is no wind.
