You might look at getting or making a big dry bag like kayakers and
white-water-rafters use. Here's a page with some info,
http://www.seattlefabrics.com/dry_bag.html, it says they can send an
article from "Sea Kayaker" magazine on how to do it yourself. I think
they are usually made from PVC fabric. I don't think Sunbrella would be
nearly waterproof enough, even if treated. Whatever you go with, it
would likely need good chafe patches between bag and deck and between
bag and lashings.
