Well, new insulation is sounding like a better and better idea.
As to the engine issue, why no just sandwich in two panels, rather than
one pane, on the engine side - that should do the trick.
Finally, I just got a digital thermometer for checking the temperature of
my steaks - from a company called Thermoworks. There is not latency in the
measurement - so one can get a perfect steak.
I then realized this was a way to measure the temperture inside the fridge
without opening.
I went back to their web site and found other interesting instruments - a
temperature logger - where you can download the temp chart to your pc.

Anyway, it is many years since physics classes, but, I bet on a hot day
you could close your box, use the dual probe, turn off the compressor and
then measure the heat loss (with an empty box) and figure out the R factor
- something about computing the area between the two temp curves etc...
