We use a 45# CQR and 3/8" BBB chain on OWTW and, with few exceptions,
it's held nicely. The Chesapeake has a mix of mud, clay, and sand
bottoms. On occasion there isn't a bottom so much as a gradual
thickening of the water as the percentage of "dirt" increases!
Nonetheless, we're quite satisfied with the anchor. Our drill is veer
out a lot of chain as we back slowly under power. With a little
sternway on and enough rode out, the hook digs in to a degree and we
veer out enough chain for the situation (we typically ride to 5:1 with
the chain) and then back that down. A hand on the chain as it becomes
taut tells the story. If the chain goes bar tight, all is well; if
there's some movement or bumping in the chain, things aren't well.
Happily, except when I misjudge where other boats are, I rarely have to
make a second attempt at anchoring.

As to keeping chain off the bobstay, as mentioned here earlier, we set a
chain hook on the chain and haul a line to the hook in through the
starboard hawse pipe (the chain pipe's starboard of the bow sprit).
That keeps the chain off the stay and brings the bow slightly to one
side which seems to limit swinging.
