Hi Rick (beddoe) Sorry to see what a trauma you had with the chainplate removal. Mine were tough, but nothing like as bad as yours.
I have replaced all the port/Starboard chainplates now and next year I will do bowsprit and stern plate.
I have a copy of a baba 30 promotional data sheet that says all stainless fittings are 304 to reduce cost. I think my old fittings were 304, but can't be sure. The new fittings are 316 and should last the next 25 years. The problem with my chainplates was caused 100% by crevice corrosion. The deck plate sealant failed some years before I bought my baba and water dripped into the area between the teak deck and the bottom of the deck core; Starved of oxygen there , crevice corrision took hold. water also leaked into the core there.
I removed the chainplates, sealed the core from further water ingress and rebedded the new 316 chainplates in sikaflex 292, a stronger version of 291. I will check the seals every year but I expect the new chain plates to last at least another 25 years.
My point is that 304 / 316 is not really the issue. You have to stop crevice corrosion by maintaining a good watertight seal on the shroud deck plates
